What this is, and what it is not
These are prices member states report as representative of their own market. They are not exchange settlements, they are not audited, and they are not what any particular tonne changed hands for. Read them as the level a country's market was working at that week — useful for checking whether a quote sits with its origin, and not a substitute for a traded price. Where we hold both, the EEX settlement and our own executed average are shown next to them rather than mixed in.
Prices that do not move
Not every weekly filing is a fresh observation. Ireland resends the previous week's figure in roughly four weeks out of five, on every product it reports — and cheddar's European panel is Ireland alone, so the European cheddar reference changes about one week in six. On a chart that is indistinguishable from a market standing still, which is the more dangerous of the two readings. Any state that repeated itself in half of the last year's filings is marked in the table.
Where it goes quiet
Reporting is voluntary in practice and it thins out. The Netherlands stopped reporting gouda in 2021 and has never reported cream, so the European gouda reference is now German, Polish, Czech and Croatian — with the Dutch market, which sets it, absent. Cheddar is effectively Ireland alone. Nothing here is filled in or estimated — a state that did not file is absent, and says so.
